Hand-passed smoked meats, spent grain bread
paired with: John E. Fitzgerald Larceny
Mixed peppercorns and Bart’s Brew coffee-encrusted pork belly on a bed of cream-and-sugar polenta cakes
paired with: Rittenhouse Rye (bottled in Bond)
Pork loin roulade stuffed with dirty rice topped with flame grilled asparagus
paired with: Evan Williams single barrel, vintage 2004 barrel no. 207
Whole quail stuffed with wild mushrooms, scallions, roasted shallots and house-smoked sausage
paired with: Henry McKenna 10 year single barrel (bottled in Bond) barrel no. 1103
White chocolate mousse “Old Fashioned” with burnt orange & twice-macerated maraschinos
paired with: Elijah Craig 12
ALSO: we’ll be introducing a Foothills Five Oaks whiskey; oak aging done in-house by Caleb using Evan Williams bottled in Bond White Label whiskey.
